What is the difference between gelato and ice cream?
If you’re looking to the Italian dictionary you would find that gelato means ice cream and therefore in that context you can say that gelato is the same as the ice cream but this is not true because ice cream means different things in different countries and across different continents and therefore even though gelato means ice cream it is completely different from the normal ice cream which we were used to having a couple of decades earlier.
If you look at the American ice cream you would find that it is much more thicker and much more heavier and although the texture is completely different as compared to the gelato ice cream which you are used to having these days and which is widely available all over the world these days. The texture of gelato is much more smoother as compared to the American ice cream.
The taste is also much more precise of gelato as compared to the American ice cream. So, even if gelato means ice cream it is not exactly the same kind of ice cream as you were used to having a couple of decades earlier as we mentioned above. That brings us to the important question what is the difference?
The difference can essentially be divided into three parts and those three parts are the fat content and the air content and the temperature at which the ice cream is served and the temperature at which the gelato is served. We would be going into each of these aspects one by one to understand what is the difference and which one is better.
If you’re looking to the basic manufacturing process of ice cream or gelato as you call it you would find that it is basically containing a lot of water and this water content is frozen and the main aim of the ice cream companies is to make sure that these crystals are as small as possible and so that they can bound to other type of flavours and other type of ingredients as well. Now we would be going into the factors which differentiate gelato from ice cream.
Fat content: As we mentioned above at content is one of the most important aspects which differentiates the gelato from the ice cream. The content of milk in gelato is much more as compared to the content of cream which is more in the American ice cream and therefore you can say that the fat content is actually lower in gelato because more milk is used and less of cream is used.
Air content: When you look at the American ice cream you would find that there is a lot of air content and sometimes in the high-end as cream is also there is a content of around 25% whereas in the low and ice creams the air content is of around 50% in some of the most cheapest versions and therefore you can say that the content of air in the American ice cream is much greater.
This is because when the American ice cream is being made it is being churned very rapidly and therefore this produces more and more air into the mixture to increase the volume of the ice cream.
Similarly, when you look at the making process of gelato you would understand that the churning is much slower and therefore less here is introduced and therefore the volume of the actual ice cream is much more and the volume of the air is actually very much lower.
That is why it tastes so good and the flavour is so distinct as well when you’re eating gelato.
Serving temperature: You might be thinking that since gelato is having more flavour and also less of fat as well then it might be very hard as compared to the normal ice cream but this is not true because gelato is actually sold at a temperature which is higher as compared to the normal ice cream. This gives it the soft texture which we experience when we are eating gelato as compared to the normal ice cream.
If gelato were to be sold at the same temperature as the American ice cream then it would be much more harder as compared to the American ice cream. That is why gelato, is sold at a higher temperature whereas if you saw the American ice cream at the temperature at which you so gelato then it would simply melt away.
It is very difficult to keep gelato in a proper state for a long period of time and therefore whenever you’re consuming are buying gelato it is generally advisable to consume it in the store without waiting for much period of time.
If you keep on the freezing and refreezing gelato by buying the family back and taking it to your home and then putting it into the freezer you would affect its consistency and also you would not be having a proper texture as well. If at all you need to do this then it is a good idea to keep it outside the freezer for at least 30 minutes before eating and then think of consuming gelato.
So, now you know the difference between gelato and ice cream and it is up to you according to your taste buds which one you like better because we are normally accustomed to the American ice cream but the gelato is a new addition to the range of deserts which we have got and since it is so soft and so rich in flavour people all over the world are preferring gelato as compared to the American ice cream.
